I am not a morning person. The sleep function on the alarm clock was designed specifically for people like me. I am the kind of person who struggles to get out of the front door in the morning because everything takes me twice as long. And those who know me know not to try and engage in any kind of sensible conversation until I have “woken up”. This means that it is only once in a blue moon that I actually have the time to fit in a proper breakfast (in fact scrap that because we had a blue moon last week and I was late on that day too!).
This coffee bean smoothie has become my morning saviour and is the perfect breakfast solution for those on the go. The banana provides a great source of energy and is high in potassium, fibre, antioxidants, and tryptophan (a natural-mood enhancer), the chia seeds have omega-3 and omega-6, whilst the coffee beans provide CAFFEINE. What’s not to like?! So this smoothie not only counts as breakfast but also makes a tasty alternative to your morning cappuccino – two birds with one smoothie!
As with most smoothies, this recipe is quick and easy – I can even make it in my sleep (and have on many a morning)! Simply toss all of the ingredients into your blender and blend to the desired consistency. If you don’t have a frozen banana don’t worry. You can use a fresh banana and add some ice cubes to achieve the same result.
Coffee Bean Smoothie
Ingredients:
1 Frozen Banana
1 Cup Almond Milk
1 Tbsp Whole Coffee Beans
1 Tbsp Chia Seeds
1 Tbsp Coconut Oil (optional)
Tip: Add medjool dates, cocao powder, maple syrup, or vanilla for a different taste.
Instructions:
Place all of the ingredients into a blender and blend on high speed to the desired consistency.
