Funfetti Cake Mix Cookies with Milk 2Today is always one of the hardest days of the year for me, because today is my husband’s birthday. That’s not to say it isn’t a day of happiness and celebration, because it most definitely is, but like many other men, my husband is insanely difficult to buy a gift for. He is the man who has everything, or at least, he is the man who has everything he wants. Which doesn’t leave a lot of room for inspirational gift buying. So after weeks of pondering, fretting and stressing I have finally admitted defeat. What is a wife to do?!!!

Funfetti Cake Mix Cookies In JarOur mom bakes the most amazing cookies, they are out of this world. “They’re only made with cake mix and butterscotch chips” she’d confide in me, but they are the most amazing cookies I have ever eaten – soft, sweet, chewy – everything a cookie should be. In America, Funfetti cake, which is a plain sponge cake laden with colourful confetti sprinkles is commonly used for a birthday cake. So that was it, I would make the love of my life Funfetti Cake Mix Birthday Cookies! I also had some milk chocolate M&M’s in the cupboard, which I thought would add extra colour and an awesome chocolate hit, so I added these to my Funfetti cookie mix and they turned out fantastically – even if I do say so myself!

To get started pre-heat the oven to 350°F. Then combine the cake mix, eggs, and oil in large mixing bowl, and beat well.
Once the dough is ready, stir in the M&M’s. You could also try butterscotch chips, macadamia nuts, white chocolate chips, peanuts, whatever takes your fancy. You can also experiment with different cake mixes to achieve your favourite flavour combinations – chocolate cake mix with mint chocolate chips is one of my all-time faves!

Now roll the dough into balls and place on a cookie sheet lined with a non-stick baking mat. Be sure to leave enough room between each cookie for expansion while it’s baking. Press gently to slightly flatten the dough balls.

Bake for 7–9 minutes, or until the edges start to brown. Then remove from the oven and leave to cool on a wire rack – if you can wait that long!!!

Funfetti Cake Mix Cookies on Plate

Ingredients:

1 box Pillsbury Funfetti Cake Mix
1½ Cups M&M’s
2 Eggs
4 Tbsp Vegetable Oil

Instructions:

Pre-heat the oven to 350ºF.

Combine cake mix, eggs, and oil in large mixing bowl, and beat well.

Stir in the M&M’s.

Drop onto non-stick cookie sheet in rounded balls.

Bake for approx. 7–9 minutes, or until edges start to brown.

Cool on a wire rack.
