Aunt D’s Pineapple Dessert Pizza

Pineapple Dessert Pizza Grill Side ShotWhether you’re partial to Hawaiian style ham and pineapple, Italian sausage and pepperoni, or  barbecue chicken, pizza is a universal food that everyone enjoys.

This week, as I indulged in my fave Mushroom, Artichoke and Truffle Oil Pizza at Primo’s, my mom excitedly told me about Aunt D’s Strawberry Pizza. Now, I am always one to encourage creativity and thinking outside of the box, but strawberry on a pizza? That’s a travesty, both to pizza and to strawberries, surely?!

However, my husband was quick to join his mom in praise of Aunt D’s Strawberry Pizza, claiming it as one of his favourite desserts. Intrigued, I contacted Aunt as soon as I got home to see if she’d be willing to share her recipe with me, and with the click of mouse, she magically transported me to a pizza-dessert heaven I never even knew existed.

 

Pineapple Dessert Pizza Slicing Slice GoneWith a buttery biscuit base, sweet cream cheese layer and fruity strawberry topping this is a prize-winning creation to top all desserts. Putting my creative hat on – it does happen on occasion! – I wondered if I could combine Aunt D’s renowned recipe with my hubby’s favourite Hawaiian pineapple topping and my current craving for anything coconut. And this, my friends, is how Aunt D’s Pineapple Pizza was born!

You can use any variety of fruit combinations for the topping. Aunt D’s original Strawberry Pizza recipe uses a quart of sliced fresh strawberries with a container of strawberry glaze. You could also substitute the coconut flakes with some grated chocolate or chopped nuts.

To get started, you’ll first need to pre-heat the oven to 325°F.

To make the pizza crust cut together the butter, sugar and flour with a pastry blender. Then press the dough out into an oiled pizza pan.

Bake the pizza crust for 10-15 minutes, until it is golden brown, then set aside to cool.

To prepare the grilled pineapple (or you can simply use fresh pineapple if you prefer) whisk the brown sugar and cinnamon together in a bowl. Then sprinkle the cinnamon sugar over both sides of the pineapple and grill on a medium-high heat until heated through, approximately 3-5 minutes per side. Place the grilled pineapple in the fridge to cool.

In a separate bowl mix together the cream cheese and powdered sugar.

Spread the cream cheese onto the cooled pizza crust, then add a layer of pineapple jam – I used a mouthwateringly delicious pineapple jam from the Balinese company, Awani – it makes a huge difference to the final taste if you use a good quality jam!

Top your pizza with the grilled pineapple slices and a generous sprinkle of coconut flakes. Place in the fridge and leave to chill until it’s time to serve and enjoy!

It is better to make this pizza the day or night before serving, as it’s best eaten chilled. Slice it like a pizza and serve with fresh whipped cream – enjoy!  

To make Aunt D’s Pineapple Dessert Pizza Recipe I used the following equipment:

Ingredients:

Pizza Crust:
1 Stick Butter
½ Cup Powdered Sugar
1 Cup Plain/All Purpose Flour

Cream Cheese Layer:
8 oz Cream Cheese (room temperature)
½ Cup Powdered Sugar

Pineapple Topping:
½ Jar Pineapple Jam (I used Awani Jam)
Fresh Pineapple Slices
¼ Cup Brown Sugar (optional)
½ Tsp Ground Cinnamon (optional)
¼ Cup Dried Coconut Flakes

Instructions:

Pre-heat oven to 325°F.
 
Cut the butter, sugar and flour together with a pastry blender.
 
Press the dough into an oiled pizza pan and bake for 10-15 minutes, until golden brown. Set aside to cool.
 
Whisk brown sugar and cinnamon together in a bowl. Sprinkle over both sides of fresh pineapple slices.
 
Pre-heat a lightly oiled grill on medium-high heat and grill the pineapple slices until heated through, approximately 3-5 minutes per side. Place in fridge to cool.
 
In a separate bowl, mix together the cream cheese and powdered sugar. 
 
Spread a layer of cream cheese, then a layer of pineapple jam, onto the cooled pizza crust. Top with slices of grilled pineapple and a sprinkle of coconut. 
Best served chilled. Slice and served with a side of fresh whipped cream.
