BBQ Bacon Meatloaf MainToday’s post features an oldie but goodie recipe that has fast become a staple dinner in our home. Delicious, simple to prepare, and a firm fave of my hubby’s, this BBQ Bacon Meatloaf recipe makes a great weeknight dinner and provides plenty of leftovers for meatloaf sandwiches later in the week – bonus!

I loved meatloaf back home in England, but this version adds the irresistible flavour of bacon – what doesn’t taste better with bacon? – together with the good ole traditional flavours of American barbecue.

BBQ Bacon Meatloaf SlicedI make my meatloaf using ground beef, however, you can easily substitute the beef for ground pork or turkey, or even a combination of all three. But I simply LOVE the taste and the quality of beef in America, which is all too apparent from my medical records, which have leaped from anaemic levels of iron, to those that would make Ironman fearful!

And for those of you with a keen eye, I admit it, the game is up! I FORGOT THE BACON when making this recipe for the blog – whoopsie! But I do have to say that the meatloaf was just as moist and delicious, so it’s totally up to you if you wish to omit it, or add and bring home the bacon!

To get started on your meatloaf, first pre-heat the oven to 350°F and then roll up your sleeves, cos it’s gonna get dirty!

Set aside the bacon and barbecue sauce. Then in a large bowl, mix together all of the remaining ingredients to form a meat “dough”. You can do this using a spoon or spatula, but sometimes it’s best to just jump right in and do it with your hands.

Once totally combined, form the meat into a loaf shape and place it in an oven-proof rectangular pan. Lay the bacon slices across the top of the loaf – be as rustic, or creative as your heart desires – then spread a generous amount of barbecue sauce over the top of the loaf, reserving some sauce for basting later.

Place your loaf in the oven and bake, uncovered, for approximately 60-75 minutes, or until cooked through.

Half-way through baking, add more sauce to the top of the meatloaf, for a moist and flavourful meatloaf.

Slice and serve the meatloaf while hot. We enjoy ours with lots of fresh green broccoli and extra barbecue sauce on the side – enjoy!

BBQ Bacon Meatloaf

  • Servings: 8-10

Ingredients:

3 lb Ground Beef
2 Eggs
1 Cup Breadcrumbs
½ Cup Ketchup
½ Cup Milk
1 Tsp Garlic Powder
½ Tsp Salt
½ Tsp Pepper
2 Tbsp Fresh Chopped Parsley
½ Small Onion (finely chopped)
½-1 Cup Barbecue Sauce
 
6-8 Slices Thick Cut Bacon

Instructions:

Pre-heat oven to 350°F.
