I love Halloween. Not only does it give me a great excuse to spend even more time on the sofa, peeking out from the safety of my blanket while watching scary movies, but it also means I get to eat Halloween Candy.
Halloween candy is pretty hard (impossible!) to resist. The concierge desk awaits me upon my return home with a bucketful of Halloween candy, pay a visit to the doctor and you’re greeted with Halloween candy, walk into any self-respecting home and you’re offered more Halloween candy – so surely it would be rude, I mean almost offensive, not to take a piece?
Halloween candy is a serious matter in the USA with bite-sized, individually wrapped pieces of your favourite candy bars sold in bumper packs. The bottom drawer of our fridge is annually dedicated to this holiday phenomenon – nom nom nom. But what to do when you get sick of eating all this candy – I am yet to experience this feeling myself – make Halloween Cookies, of course!
These cookies are perfect for the busy Halloween holiday as they need only four ingredients, take minutes to prepare, and are No-Bake Cookies – so get the kids into the kitchen and get them “cooking” for a change!
I use Pumpkin Butter to keep these cookies in the Halloween spirit. If you don’t have, or can’t find, any Pumpkin Butter it is incredibly easy to make – take a look at my Recipe for Home-Made Pumpkin Butter to get the know-how. However, if pumpkin isn’t your thang you can easily substitute it with your fave nut butter – delicious!

So as you can see from the video this recipe is ridiculously easy to follow. Simply throw the ingredients into a bowl (setting aside some of the M&M’s for decoration), mix together thoroughly, cover and chill in the refrigerator for half an hour.
Once chilled, divide the mixture into bite-sized balls, flatten into cookie shapes, decorate with the M&M’s and devour!!!
No Bake Pumpkin Cookies
1½ Cup Oats
½ Cup Pumpkin Butter
1 Bag Autumn M&M’s
½ Cup Maple Syrup
Place all ingredients in a mixing bowl (setting aside some M&M’s for decoration) and stir until completely combined.
Cover and chill in the fridge for 30 minutes.
Once chilled, roll into bite size balls and flatten into cookies.
Decorate with the reserved M&M’s and serve.
