This week I am back in the UK – my god, how cold is it here?!!!
I’ve been as busy as a bee catching up with family and friends. I was also fortunate to celebrate my dear friend Tracey’s 40th birthday at The Crazy Bear restaurant in Beaconsfield. If you haven’t been to this decadent restaurant before, you NEED to pay them a visit. The food is out of this world, the Pornstar Martini is lush (and has become my signature cocktail!) and even if you don’t need to go, you cannot miss out on the experience of finding and seeing the restrooms! Thank you Tracey for a most memorable evening.
As I haven’t had much time to get into my own kitchen, today I am re-posting one of my most popular recipes from the blog last year, Three Ingredient Pumpkin Oreo Brownies. This is an unbelievably easy recipe that results in impressively tasty brownies – I defy you not to eat the whole tray in one sitting!
Although this recipe calls for Pumpkin Oreo’s and Chocolate Brownie Mix, don’t let me tie you down – go wild! You can remove the tinned pumpkin and make the brownies by following the instructions on the box. You can also substitute the Pumpkin Oreo’s for any other flavour, or why not try other cookies such as Custard Creams or Chocolate Bourbons? And if you want to be totally creative this recipe also works well with Blondie mix – boom!

All you need is a box of chocolate brownie mix, a tin of pumpkin and a packet of Pumpkin Spice Oreo’s.
Put the chocolate brownie mix and pumpkin into a bowl and combine. Pictured is the Tovolo Dough Whisk.
Spread half of the mixture around the bottom of a non-stick baking pan, followed by a layer of the Oreo cookies, topping it off with a layer of the remaining pumpkin brownie mixture.
Now put your masterpiece into the oven, bake for 30 minutes at 350°F and hey presto, you have a wonderfully delicious pan full of layered pumpkin and chocolate brownie orgasmic food gratification!
The best part… this dessert is so delicious that no-one would ever believe it was so easy to make, so be sure to add puffs of flour and smudges of chocolate to random kitchen surfaces if you’re expecting guests!

Oreo Cookie Brownies
1 Pack of Chocolate Brownie Mix
1 Can of Pumpkin Puree
16 Pumpkin Spice Oreo Cookies
Pre-heat the oven to 350°F.
Put the chocolate brownie mix and pumpkin into a mixing bowl and stir to combine.
Spread half of the brownie mixture in the bottom of a non-stick baking pan.
Add a layer of Oreo cookies.
Add a final layer of the remaining pumpkin brownie mixture.
Bake for 30 minutes.
Allow to cool slightly before serving.
