WTF – What The Fluff?!!
No, I’m not shouting profanities at you, honestly! But seriously, why the fluff has it taken me so long to discover this earth-shatteringly delicious spread?
Marshmallow Fluff is a sweet, sticky, gooey, spreadable marshmallow crème and it makes food – and your life – better. Seriously. Why settle for a peanut butter sandwich when you can have a Fluffernutter Sandwich simply by adding a layer of fluff? Spread it on toast, frost a cupcake with it, make Rice Krispie treats from it, or simply plunge your finger knuckle deep in the jar and devour it!
Marshmallow Fluff is one of those foods that I had noticed on numerous occasions, but had always made the poor decision not to try it. A true “sliding doors” experience, my life continued none the wiser and fluff free – how sad is that? So it is only now, in my adult life, that my love affair with a bit of fluff has commenced. I’m on the fluff discovery bus, I’m a fluffernutter for the stuff, I’m deliriously crazy about the fluff, and I’m spreading the fluff love because I simply can’t get enough! 😆
In fact, I am so keen on the stuff that I want you to join me in a bit of fluff lovin’. So today’s post features a surprisingly quick and easy Home Made Marshmallow Fluff Recipe. It’s a five ingredient recipe (yes, only 5 ingredients!) and all it requires is the use of an electric mixer and a little over 10 minutes to make it – so no excuses!
NOTE: This recipe includes the use of raw egg, so I would strongly recommend using pasteurised eggs.
Place the egg white and corn syrup in the bowl of a stand mixer and, using the whisk attachment, beat on high speed until the mixture has doubled in size. This should take approximately 5 – 7 minutes.
Add the sugar and vanilla extract and beat on low speed until all the sugar is incorporated.
Next… hold on, there is no next step! That’s your Home Made Marshmallow Fluff made and ready for some love. Use it immediately – ensuring that you lick all remnants from your fingers and the bowl – and store whatever may be left over in an airtight container.
Home made marshmallow fluff can be stored in the refrigerator for up to 2 weeks, or in the freezer for up to 1 month.
Home Made Marshmallow Fluff
Ingredients:
- Egg White from 1 Large Pasteurised Egg (at room temperature)
- ¾ Cup Light Corn Syrup
- ¾ Cup Powdered (Icing) Sugar
- 1 Tsp Vanilla Extract
Instructions:
Place the egg white and corn syrup in the bowl of a stand mixer and, using the whisk attachment, beat on high speed until it has doubled in size (approximately 5 – 7 minutes).
