…at least, not until I have had my first cup of coffee.
I simply don’t understand how some people can leap out of bed in the morning with the energy and enthusiasm of a freshly released Jack-in-the-Box, greeting everyone who crosses their path with cheery smiles and children’s TV presenter style greetings.
I am NOT that kind of person. At best, coffee enables me to perform the most basic of tasks, at worst it prevents me from committing a serious crime before breakfast. So imagine my joy at finding this recipe for Pumpkin Spice Coconut Creamer by fellow blogger, Sugar and Charm – now I can add a spicy pumpkin perk to my morning pick-me-up.
I am pumpkin spice crazy, but sometimes I find the PSL’s served at coffee stores too sweet and artificial. This home-made coffee creamer, although not exactly 100% healthy, does contain real pumpkin – that’s gotta count towards your 5-a-day doesn’t it? – as well as adding a rich, velvety, hint of coconut to your cup of Joe. Now I might even be able to manage a smile in the morning.
What’s more, all you need to do is blend the ingredients together and add it to your coffee. So simple you could almost make it in your sleep!
Pumpkin Spice Coconut Coffee Creamer
Ingredients:
1 Can Coconut Cream
1 Tbsp Vanilla Extract
6 Tbsp Maple Syrup
2 Tbsp Pumpkin Puree
¼ Tsp Ground Cinnamon
¼ Tsp Ground Nutmeg
¼ Tsp Ground Allspice
1/8 Tsp Ground Cloves
Instructions:
Place all of the ingredients into a blender and blend until completely combined.
Add to coffee, as desired.
Cover and store in the fridge for up to 4 days.

This sounds delicious! I still haven’t tried a pumpkin spice latte but I keep thinking about it. So good to be able to make you own equivalent at home with this recipe.
