I’m just a girl standing in front of an ice cream asking it to be healthy…

…well my prayers have been answered by a heavenly angel, the lovely Corina Blum from Searching For Spice. For her Chocolate Banana Nice Cream Recipe magically landed in my inbox this week  – yaaasss!

chocolate_banana_nice_creamSo miracles really do happen and I was able to satisfy my ice-cream craving with a vegan, dairy-free ice cream that is made with just three ingredients and no added sugar – see there is a god! It is quick to make, tastes delicious and is guilt-free, making it the ideal non-cheat treat.

But when the weekend comes and I’m devouring enough calories to launch the next SpaceX rocket into orbit – hey Elon, you should give me a call – nice cream doesn’t really sit right does it? I mean it’s a little hypocritical to spend half the day in my local Red Robin, tucking into their juicy burgers, deep-fried pickles and bottomless fries like there’s no tomorrow and then elegantly nibbling on a bowl of healthy nice cream.

I’m an all or nothing kinda girl. Either I’m so angelically healthy it hurts – like, it really hurts –  or there are no holds barred and you can find me under a mountainous pile of empty candy wrappers and fast food cartons.

So for those naughty, indulgent days I offer you the ultimate sin, my No-Churn Peanut Butter Explosion Ice Cream Recipe – it has peanut butter cups, peanut butter, creamy ice cream AND it tastes totally explosive – oh, you’re in for a treat!

Sinner or Saint: No-Churn Peanut Butter Explosion Ice Cream vs. Chocolate Banana Nice Cream

Saint’s Recipe: Chocolate Banana Nice Cream

Servings: 2  |  Difficulty: Easy

Ingredients:

3 Very Ripe Bananas
2 Tbsp Unsweetened Cocoa Powder
50ml Almond Milk

Instructions:

Slice the bananas and freeze for half an hour.

Place all of the ingredients into a blender and blitz until smooth, Add a little extra milk, if necessary.

Serve immediately or store in the freezer until needed.

Sinner’s Recipe: No-Churn Peanut Butter Explosion Ice Cream

Servings: 1Qt Tub  |  Difficulty: Moderate

Peanut Butter Explosion Ice Cream Main Image Square

Ingredients:

½ Cup Peanut Butter (Creamy, not Crunchy)
14oz Sweetened Condensed Milk, Chilled
2 Cups Heavy Cream, Chilled
1 Cup Mini Reese’s Peanut Butter Cups

Instructions:

Beat the peanut butter and half of the sweetened condensed milk together until blended and creamy.

Slowly add the remaining sweetened condensed milk until it is completely incorporated.

Pour in the heavy cream and beat until soft peaks form.

Layer a small amount of the mixture into your ice-cream (storage) tub, followed by a sprinkle of the peanut butter cups.

Repeat the layers until all of the ice cream is used.

Freeze until firm.
