I’m Going To Start Eating More Healthily…

…But First I’ll Have To Eat All The Junk Food In My Kitchen To Remove Temptation!

I am a modern girl with first world problems. I long to look like the skinny, tousle-haired, flawlessly skinned women who flood my social media – you know the ones who seemingly spend their lives draped across the hull of a yacht or aimlessly walking into the tranquil waters of an exotic beach, the water rippling between their perfectly manicured fingers. However, my reality is a very different story.

I huff, puff and sweat my way through gym class, mentally write my shopping list when I am supposed to be meditating, never seem to be able to find the time to fix that snagged fingernail, and am completely incapable of meal planning.

The last item on this list has far greater consequences on my wellbeing because it means that we often resort to eating out – and by often, I actually mean a lot – and while it’s great not to have to cook every evening, my complete lack of willpower is a greater problem.

Chips n’ salsa to start? Sure, why not. A third helping of bottomless fries at Red Robin? Sure, why not. A big fat ice cream sundae wrapped in a hot waffle, smothered in toffee sauce and topped with reese’s peanut butter cups and a family size deep fried Snickers bar? It’d be rude not to!

So how to tackle my predicament of thigh expanding proportions? The answer appeared, not amongst a mirage of Instagram fitness models, but at our local food market on a stall for a company called Imperfect Produce. Imperfect Produce is a fruit and veggie box service with a difference: they’re ugly! Honestly, I’m not being mean, they’re actually proud of their ugly schtick!

Well, they say that it’s what’s on the inside that counts and being much less than perfect myself, I signed up for a subscription right there and then.

Now my kitchen is always stocked with fresh and healthy food and my meal planning is  much easier now that it is driven by the goodies I choose for my customised box each week. It has totally changed the way I cook and eat, and I now feel much healthier – yes I am totally gloating over my new found healthy imperfection!

Kale, Apple and Ginger Smoothie

  • Servings: 1
  • Difficulty: Easy

Ingredients:

  • ½ Medium Apple, Cored and Roughly Chopped
  • 5 Thick Cucumber Slices
  • ½ Lime, Freshly Squeezed
  • 1 Tbsp Fresh Ginger, Roughly Chopped
  • 1 Large Handful Baby Kale or Spinach
  • 1 Tbsp Chia Seeds (Optional)
  • 1 Cup Water
  • 4 – 5 Ice Cubes

Instructions:

NOTE: If not using a high-powered blender, you’ll need to peel the apple.

Add all of the ingredients to a blender and blend on high until smooth.

Add additional water as necessary, or until desired consistency is reached.

Serve immediately.
