Yes, it is officially Autumn and that means it is again time to open our hearts and embrace all of that yummy scrummy Pumpkin Spice goodness that surrounds us!
You know what I love best about Autumn? It’s the only season that bestows us with delicious desserts and sweet treats AND we get to pull out the “veggie” card – who says I don’t eat healthily?!
Pumpkin Pie? Clearly vegetable! Pumpkin Butter? It’s a vegetable spread! Pumpkin Cupcakes? Just read the ingredients dummy, they contain real pumpkin!
Jokes aside, pumpkin is low in saturated fat, cholesterol AND sodium. It’s also a good source of Vitamin E, Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Riboflavin, Potassium, Copper and Manganese – phew!
OK, OK, so sticking pumpkin into a pie or a cupcake doesn’t necessarily make it a healthy food, but every little counts. It also tastes SUPER and it is a FOOD, so that makes everything pumpkin a SUPERFOOD doesn’t it?! 😉
