Making brownies from scratch is frightfully easy, and although I won’t judge you for using a box of brownie mix, this recipe results in brownies that are so chocolatey, gooey and delicious, you’ll think you’ve died and gone to brownie heaven – or should that be Halloween brownie hell?!

skull_brownie_sandwichThis recipe gives you all you need to make everything, apart from the fondant icing, from scratch – I have my limits! – but you can also add another “cheat” by using ready-made buttercream. Simply add some orange essence (or any other flavour) and orange food colouring to create a flavourful Halloween buttercream filling.

So enough of the chatter, let’s get down to business and show you how to make your own scary Halloween Skull Brownie Sandwiches

Skull Brownie Sandwich

Ingredients:

Chocolate Brownie:

1 Stick Unsalted Butter
1 Cup Granulated Sugar
¼ Cup Brown Sugar
1 Tsp Vanilla Extract
3 Eggs (Room Temperature)
½ Cup All Purpose (Plain) Flour
½ Cup Cocoa Powder

Buttercream Filling:

½ Cup Unsalted Butter, Softened
3 Cups Powdered (Icing) Sugar
2 Tbsp Milk
1 Tsp Orange Extract (or Vanilla)
Pinch Salt
Orange Food Colouring (or Red & Yellow Combined)

Decoration:

1 Sheet of Fondant (Royal) Icing
Pack of Coloured Decorating Icing Pens/Tubes

Equipment:

Tovolo Skull Cookie Cutter Set
8 Inch Square Baking Pan
Silicone Spatula
Knife
Coloured Icing Pens

Instructions:

To make the brownies, preheat the oven to 350ºF (180ºC) and line an 8 inch square baking tray with parchment paper.

Melt the butter, leave to cool for a few minutes, then transfer to a large mixing bowl.

Add the granulated sugar, brown sugar and vanilla extract. Mix well until thoroughly combined. NOTE: mixing the sugar and butter together properly guarantees a good brownie!

Add the eggs one at a time, mixing well after each egg is added.

Add in the flour and the cocoa powder and stir until completely combined.

Pour the batter into the pan and bake for 20 minutes. NOTE: do not overcook to ensure a fudge consistency.

Leave to cool for 10-15 minutes. 

To make the buttercream filling, beat the butter in the bowl of an electric mixer, on medium speed, until well blended.

Add the powdered sugar, milk, orange extract, salt, and food colouring and beat on low speed until fluffy and creamy.

To make your skull icing toppers, roll out the fondant icing and cut out 9 skull shapes using a cookie cutter. Then stamp the designs into the cut out icing with your chosen skull stencils.

Decorate the skulls with coloured decorating icing, as desired, and leave to dry.

To construct your brownie sandwiches, slice the brownie into 9 equal sized squares, then slice each square horizontally to make your sandwiches. Spread a layer of buttercream onto each brownie bottom and replace the top. Use a small dab of buttercream to secure a skull icing topper to the top of each brownie sandwich.
